It would not be an overstatement to say that the bakery is the heartbeat of La Casa del Pan. As a matter of fact the Casa del Pan Vegetarian Restaurant and Organic Cafe is a home-grown concept which began when Kippy started baking bread at home with the recipes she had learned from her husband Ron a long time ago. Kippy sold her delicious breads to friends, schools and at social events until her compadre Architect Octavio Barocio invited her to open a whole-grain bakery in the Ecological Park he was planing to open in Tlalpan, Mexico City, at the site of the recently-closed paper mill of Loreto and Peña Pobre. He recognized that it would be perfect for Kippy to have a store in the park and serve eco-friendly meals to park visitors. That was how the first Casa del Pan opened in Mexico City in 1989. It began as a whole-grain bakery that served whole wheat breads, pastries and a special flaky pastry stuffed with cheese and organic vegetables, which is known as hojaldre (pronounced "oh-hahl-dray"). Kippy offered these with organic coffee, organic hot chocolate, selected teas and an assortment of delicious and nutritious fruit drinks. It was exactly what a park with health-conscious visitors were looking for in a city that has an abundance of eating houses, but very few who pay attention to the concept of "health food," without making it taste like punishment. La Casa del Pan´s whole wheat breads and pastries have become famous, and the sourdough is a special treat.
Each of the Casas del Pan up till today is serviced by an in-house whole-grain bakery whose products compliment the menu of each location...
