La Casa del Pan in Cuernavaca was opened by Amy Nigh on December 12 (Día de La Virgen de Guadalupe) 1998. "Papalotl" means "butterfly", in the ancient indigenous Mexican Nahuatl language. It symbolizes the spirit and is associated with the element, fire. In 1998, all three Casas del Pan adopted the Papalotl logo and name. Besides whole-grain breads and scrumptious pastries, Amy and staff prepare delicious homemade soups and vegetable-cheese strudels, organic salads, & organically-grown Chiapas expresso coffee. Mexican crafts, ambar jewelry, mayan textiles, etc., are available in the shop. Open Monday-Saturday, 8:00 a.m.-8:00 p.m.
